Fight Fuel: Pomegranate Pumpkin Avocado Toast

Call me basic, but I love avocado toast. It’s a colorful and tasty departure from nut butter. But, even avocado toast can run its course. Here’s where pomegranate and pumpkin come into play.

The added crunch from pomegranate and pumpkin seeds makes for a more filling toast. Nutrition-related perks include:

  • Pomegranate seeds contain three different types of antioxidants. Since all antioxidants don’t perform the exact same job, branch out to provide your body the best protection possible.
  • One-quarter cup of pumpkin seeds contain 46% of your daily magnesium requirement. Magnesium is essential to healthy bones and proper muscle functioning.

So give this revamped avocado toast a try.

Pomegranate Pumpkin Avocado Toast

(serves 1)


1 slice of 100% whole grain bread

¼ of an avocado, mashed

1 Tbsp toasted pumpkin seeds (pepitas)

2 Tbsp pomegranate seeds


  1. Toast the bread.
  2. Spread the mashed avocado over the toast.
  3. Top with pomegranate and pumpkin seeds.
