FIGHT FUEL – Trainer Nicole Schultz fuels her mornings with this dairy-free, vegan PB & J breakfast bake from time to time. It’s also a great option if you’re cooking for a crowd or heading to a potluck style brunch.
Peanut Butter & Jelly Breakfast Bake
3 cups rolled oats
2 cups Uncle Sam cereal, or other bran cereal
1 tsp baking powder
1/2 tsp sea salt
1 tsp ground cinnamon
1/2 cup natural peanut butter (smooth or crunchy)
4 cups unsweetened plain almond milk
1/4 tsp vanilla extract
1 can unsweetened light coconut milk
- Preheat oven to 350°F. Prepare a 9×9 inch baking sheet with cooking spray or parchment paper.
- Whisk together dry ingredients. In another bowl whisk together the wet ingredients. Combine wet and dry well with a spatula, transfer mixture into the baking dish.
- Bake uncovered for about 35 minutes or until well set and slightly browned on top.
- Top with fresh berries, chopped peanuts and jelly before serving.
