FIGHT FUEL – Trainer Nicole Schultz fuels her mornings with this dairy-free, vegan PB & J breakfast bake from time to time. It’s also a great option if you’re cooking for a crowd or heading to a potluck style brunch.

Peanut Butter & Jelly Breakfast Bake

(Serves 8-10)


3 cups rolled oats

2 cups Uncle Sam cereal, or other bran cereal

1 tsp baking powder

1/2 tsp sea salt

1 tsp ground cinnamon

1/2 cup natural peanut butter (smooth or crunchy)

4 cups unsweetened plain almond milk

1/4 tsp vanilla extract

1 can unsweetened light coconut milk


Fresh berries

Chopped peanuts

Fruit jam


  1. Preheat oven to 350°F. Prepare a 9×9 inch baking sheet with cooking spray or parchment paper.
  2. Whisk together dry ingredients. In another bowl whisk together the wet ingredients. Combine wet and dry well with a spatula, transfer mixture into the baking dish.
  3. Bake uncovered for about 35 minutes or until well set and slightly browned on top.
  4. Top with fresh berries, chopped peanuts and jelly before serving.
