Fight Fuel: Nut Butter Apple Rings

Nut Butter Apple Rings – Just like fighting, sometimes eating is mind over matter. Donut cravings can arise when you’re hungry (hangry?), stressed or simply want something sweet. Resist the urge to indulge and opt for a filling dish of apple rings.

Apple rings mimic the shape of donuts, but provide a much-improved dose of nutrition. The apple, coconut, figs and chocolate chips provide the carbs you’re craving; the nut butter and coconut satisfy the mouthfeel with healthy fats; and the nut butter provide satiating power of protein. Plus, the apple’s fiber and water contents will add to that feeling of fullness — something donuts can’t match.

Nut Butter Apple Rings

(serves 1)


1 apple

1-1/2 Tbsp natural nut butter

1 Tbsp coconut flakes

1 Tbsp chocolate chips

1 dried fig, chopped


  1. Core the apple.
  2. Cut the apples horizontally into cross-sectional discs.
  3. Spread nut butter onto each apple disc. Top with the dried fig, coconut flakes, and chocolate chips, or whatever toppings of your choice.
